Kartoflanka is a comforting, traditional Polish potato soup that embodies the essence of rustic, hearty Eastern European cuisine. Ingredients
- potatoes – 2 lbs / 900 g
- onions – 2 medium, chopped
- carrots – 2 large, sliced
- celery – 2 stalks, chopped
- bacon – 4 slices, diced
- garlic – 3 cloves, minced
- chicken broth – 6 cups / 1.4 L
- milk – 1 cup / 240 ml
- flour – 2 tbsp / 16 g
- butter – 2 tbsp / 28 g
- bay leaf – 1
- salt – to taste
- black pepper – to taste
- fresh dill – 3 tbsp, chopped
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside.
- In the bacon fat, add onions, carrots, and celery. Sauté until onions become translucent.
- Add minced garlic and sauté for another minute.
- Sprinkle in the flour and stir to coat the vegetables. Cook for another minute to remove the raw flour taste.
- Pour in the chicken broth, stirring well. Add potatoes and bay leaf. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
- Remove the bay leaf. Use a potato masher to gently mash some of the potatoes for a thicker consistency.
- Stir in the milk and butter. Season with salt and black pepper.
- Simmer for an additional 5 minutes, then top with crispy bacon and fresh dill before serving.
