Ingredients
- Sushi rice – 2 cups / 440 g
- Water – 2 1/2 cups / 600 ml
- Rice vinegar – 1/4 cup / 60 ml
- Sugar – 1 tbsp / 12 g
- Salt – 1 tsp / 5 g
- Nori sheets – 4 sheets
- Cucumber – 1, medium-sized
- Wasabi paste – 1 tbsp / 15 g
- Soy sauce – for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a rice cooker, combine the rinsed rice and water. Cook according to the cooker’s instructions.
- In a small saucepan, warm the rice vinegar, sugar, and salt over low heat until dissolved. Allow to cool.
- Transfer the cooked rice into a large bowl. Gently fold in the vinegar mixture with a spatula. Let it cool to room temperature.
- Peel the cucumber if desired, slice it into long, thin strips.
- Place a nori sheet on a bamboo sushi mat. Spread an even layer of cooled rice over the nori, leaving a 1-inch edge at the top.
- Place cucumber strips along the center of the rice. Roll the mat tightly to form a neat cylinder.
- Slice the roll into six pieces using a sharp knife. Serve with wasabi and soy sauce.
