Jingisukan, a popular grilled lamb dish, hails from the northern island of Hokkaido, Japan. Named after the famed Mongolian conqueror Genghis Khan, this dish is celebrated for its unique pairing of tender lamb slices with an array of vegetables, all cooked together on a dome-shaped metal grill. Originally introduced in the 20th century, Jingisukan captures the heart with its balanced notes of sweetness, savory depth, and the earthiness of lamb. An easy-to-make family meal, it has a rustic, communal cooking style that enhances social dining experiences.

Ingredients

  • Lamb shoulder, thinly sliced – 1 lb / 450 g
  • Soy sauce – 1/4 cup / 60 ml
  • Mirin – 1/4 cup / 60 ml
  • Sugar – 2 tbsp / 30 g
  • Garlic, minced – 2 cloves
  • Ginger, grated – 1 tbsp / 6 g
  • Cabbage, chopped – 2 cups / 150 g
  • Bean sprouts – 1 cup / 100 g
  • Carrot, julienned – 1 medium
  • Green bell pepper, sliced – 1 medium
  • Sesame oil – 2 tbsp / 30 ml
  • White sesame seeds – 1 tbsp / 10 g

Instructions

  1. In a bowl, mix soy sauce, mirin, sugar, garlic, and ginger to create a marinade.
  2. Add the sliced lamb to the marinade, toss to coat well, and let it sit for 30 minutes.
  3. Heat a grill pan or prepare a dome-shaped grill over medium-high heat.
  4. Add sesame oil to the hot grill, then place the lamb in the center, surrounded by cabbage, bean sprouts, carrots, and bell pepper.
  5. Grill the lamb and vegetables, stirring occasionally, until the lamb is cooked through and vegetables are tender-crisp.
  6. Sprinkle sesame seeds over the top before serving.

Substitutions

  • Lamb shoulder -> Beef sirloin or chicken thighs
  • Mirin -> White wine with a pinch of sugar
