Jersey wonders – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Jersey Wonders are a traditional pastry from the Channel Island of Jersey, in the United Kingdom. These delightful pastries, often likened to doughnuts in texture but without any icing, have been a staple treat during festive occasions. They hold particular significance during Lent and are a nostalgic favorite for many families. The secret to their unique flavor and texture is the traditional method of twisting the dough before frying, giving them their distinctive appearance and delightful crispness.

Ingredients

  • all-purpose flour – 3 cups / 360 g
  • granulated sugar – 1/2 cup / 100 g
  • butter – 1/2 cup / 113 g
  • eggs – 4 large
  • salt – 1/4 tsp
  • vegetable oil for frying – 2 cups / 480 ml

Instructions

  1. In a large bowl, beat the eggs and sugar together until light and fluffy.
  2. Melt the butter and let it cool slightly before adding it to the egg mixture.
  3. Gradually sift the flour and salt into the bowl and mix until a soft dough forms.
  4. Cover the dough and let it rest for 30 minutes.
  5. Roll the dough out to about 1/4 inch thick on a floured surface. Cut into 4-inch long strips and twist each strip into a knot.
  6. Heat vegetable oil in a deep pan over medium heat until it reaches 350°F (175°C).
  7. Fry the dough twists in batches until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
