Ingredients
- fresh salmon fillet – 1.5 lb / 680 g
- water – 5 cups / 1.2 L
- white wine vinegar – 1/2 cup / 120 ml
- sugar – 3 tbsp / 36 g
- salt – 2 tbsp / 30 g
- whole black peppercorns – 1 tbsp / 14 g
- dill – a small bunch
- bay leaves – 3
- carrot – 1, thinly sliced
- onion – 1, thinly sliced
Instructions
- In a large pot, combine the water, vinegar, sugar, salt, peppercorns, bay leaves, carrot, and onion. Bring the mixture to a boil over medium heat.
- Reduce the heat to low and simmer for 10 minutes to let the flavors infuse.
- Place the salmon fillet skin-side down in a large, flat dish. Pour the hot broth over the salmon, ensuring it is completely covered.
- Add the dill on top and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, ideally overnight.
- Before serving, remove the salmon from the broth and slice it into portions. Garnish with fresh dill and serve cold.
