Ingredients
- chicken broth – 8 cups / 1.9 liters
- thinly sliced beef – 400 g / 14 oz
- shrimp – 250 g / 9 oz, peeled and deveined
- shiitake mushrooms – 150 g / 5.3 oz, sliced
- bok choy – 2 bunches, chopped
- silken tofu – 300 g / 10.5 oz, cubed
- udon noodles – 200 g / 7 oz, cooked
- soy sauce – 3 tbsp / 45 ml
- sesame oil – 2 tbsp / 30 ml
- garlic – 3 cloves, minced
- ginger – 2 tbsp / 20 g, minced
- green onions – 2 stalks, finely chopped
- coriander – 1 small bunch, roughly chopped
Instructions
- In a large pot, bring the chicken broth to a gentle boil.
- Add soy sauce, sesame oil, garlic, and ginger to the broth and simmer for 10 minutes.
- Arrange beef, shrimp, shiitake mushrooms, bok choy, tofu, and udon noodles on separate platters.
- Encourage diners to add their selected ingredients into the simmering broth to cook to their liking.
- Once cooked, use a slotted spoon to remove items from the broth and serve them with green onion and coriander for garnish.
