  • Sea salt – 2 tbsp / 30 g

  • Olive oil – 2 tbsp / 30 ml
  • German mustard – 3 tbsp / 45 g

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a bowl, mix together the salt, pepper, minced garlic, and olive oil to form a paste.
  3. Rub the paste generously over the prime rib, ensuring an even coating.
  4. Place the rosemary on top of the roast, pressing gently to adhere.
  5. Roast the meat in the preheated oven for 20 minutes to develop a crust.
  6. Reduce the oven temperature to 350°F (175°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 hours.
  7. Remove from the oven, tent with foil, and rest for 20 minutes before carving.
