Ingredients

  • all-purpose flour – 4 cups / 500 g
  • granulated sugar – 1/2 cup / 100 g
  • unsalted butter – 1/2 cup / 113 g, softened
  • milk – 1 cup / 240 ml, warm
  • active dry yeast – 2 1/4 tsp / 7 g
  • eggs – 2 large, room temperature
  • salt – 1 tsp / 5 g
  • lemon zest – 1 tbsp / 6 g
  • vanilla extract – 2 tsp / 10 ml
  • sliced almonds – 1/4 cup / 30 g
  • powdered sugar – for dusting

Instructions

  1. In a small bowl, mix the warm milk with the yeast and a teaspoon of sugar. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine flour, the rest of the sugar, and salt. Add the yeast mixture, eggs, butter, lemon zest, and vanilla extract.
  3. Knead the dough for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1-2 hours, or until doubled in size.
  4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Punch down the dough, divide it into three equal strands, and braid them. Form the braid into a wreath shape on the baking sheet.
  6. Cover and let the Hefekranz rise for another 30 minutes.
  7. Brush with a beaten egg for glaze, sprinkle with sliced almonds, and bake for 25-30 minutes or until golden brown.
  8. Allow to cool slightly before dusting with powdered sugar and serving.
