- butter – 2 tablespoons / 30 g
- all-purpose flour – 2 tablespoons / 16 g
- beef stock – 3 cups / 720 ml
- bay leaves – 2
- cloves – 4 cloves
- vinegar – 3 tablespoons / 45 ml
- brown sugar – 2 tablespoons / 30 g
- black pepper – 1 teaspoon / 5 g
- salt – to taste
Instructions
- Cut the beef chuck into 1-inch cubes. Season with salt and black pepper.
- Melt the butter in a large pot over medium heat. Add onions, sauté until caramelized, about 10 minutes.
- Add beef cubes, brown them on all sides. Sprinkle flour over beef and onions, stir to coat evenly.
- Slowly add beef stock, stirring continuously to avoid lumps.
- Add bay leaves, cloves, vinegar, and brown sugar. Stir well.
- Bring to a simmer, cover, and reduce heat to low. Cook slowly for 2-3 hours until beef is tender.
- Remove bay leaves and cloves before serving.
