Ingredients
- chickpeas – 1 cup / 200 g (cooked)
- butternut squash – 2 cups / 300 g, diced
- green beans – 1 cup / 150 g, trimmed and cut
- pears – 2, peeled and cubed
- tomato – 1 large, finely chopped
- potatoes – 2 medium, diced
- garlic – 3 cloves, minced
- onion – 1 large, chopped
- olive oil – 3 tbsp / 45 ml
- saffron strands – a pinch
- sweet paprika – 1 tsp / 3 g
- bay leaf – 1
- vegetable broth – 4 cups / 960 ml
- salt – to taste
- black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent.
- Stir in the tomato, saffron, and paprika, cooking for another 3 minutes.
- Add the butternut squash, potatoes, green beans, and bay leaf. Stir well to combine.
- Pour in vegetable broth and bring to a boil. Reduce to a simmer and cook for 15 minutes.
- Add the chickpeas and pears, simmer for another 15-20 minutes until all vegetables are tender.
- Season with salt and pepper to taste. Serve hot in bowls.
