Ingredients
- beef brisket – 2 lbs / 900 g
- pork shoulder – 1 lb / 450 g
- cassareep – 1 cup / 240 ml
- brown sugar – 1/2 cup / 100 g
- cinnamon sticks – 2
- whole cloves – 6
- garlic cloves – 4, crushed
- scotch bonnet pepper – 1, whole
- thyme sprigs – 4
- onion – 1 large, chopped
- water – 6 cups / 1.4 liters
- salt – to taste
Instructions
- In a large pot, combine beef and pork with water and bring to a boil.
- Skim off any foam that rises to the top.
- Add the cassareep, brown sugar, cinnamon sticks, cloves, garlic, scotch bonnet pepper, thyme, and onion to the pot.
- Reduce the heat to low and let the stew simmer gently for about 2 hours until the meat is tender. Stir occasionally.
- Season with salt to taste, and continue to simmer until the sauce has thickened slightly.
- Remove the scotch bonnet pepper before serving.
