Ingredients
- dried gungo peas (pigeon peas) – 1 cup / 200 g
- water – 8 cups / 1.9 L
- smoked ham hock – 1 medium
- pumpkin – 1 cup / 135 g, diced
- carrot – 2 medium, sliced
- yam – 300 g, peeled and cubed
- flour dumplings – 1 cup / 150 g
- scallion – 2 stalks, chopped
- thyme – 3 sprigs
- scotch bonnet pepper – 1 whole
- allspice berries – 6
- garlic – 2 cloves, crushed
- salt – to taste
- black pepper – to taste
Instructions
- Rinse gungo peas and soak in water overnight.
- In a large pot, add soaked peas, water, and smoked ham hock. Bring to a boil.
- Reduce the heat and simmer for 1 hour, or until peas are tender.
- Add pumpkin, carrot, yam, and dumplings to the pot.
- Stir in scallion, thyme, scotch bonnet, allspice, and garlic.
- Simmer the soup for an additional 30 minutes until vegetables are cooked through.
- Season with salt and pepper to taste.
- Serve hot, ensuring each bowl has a good mix of veggies, peas, and ham.
