Ingredients

  • chicken thighs – 2 lbs / 900 g
  • vegetable oil – 2 tbsp / 30 ml
  • medium onion, chopped – 1 / 150 g
  • bell pepper, chopped – 1 / 150 g
  • garlic cloves, minced – 4 / 20 g
  • tomato paste – 2 tbsp / 30 g
  • fresh thyme – 1 tbsp / 3 g
  • scotch bonnet pepper, whole – 1 / 5 g
  • carrot, sliced – 2 / 200 g
  • potato, cubed – 1 / 200 g
  • chicken stock – 2 cups / 480 ml
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2.5 g

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chicken thighs and brown them on all sides. Remove and set aside.
  3. In the same pot, add the onion, bell pepper, and garlic. Sauté until softened.
  4. Stir in the tomato paste, fresh thyme, and scotch bonnet pepper.
  5. Return the chicken to the pot. Add the carrots, potatoes, and chicken stock.
  6. Season with salt and black pepper. Bring to a simmer.
  7. Cover the pot and let it cook for 45 minutes, or until the chicken is tender and the sauce has thickened.
  8. Remove the scotch bonnet before serving.
