  • gramigna pasta – 350 g / 12 oz
  • tomato sauce – 400 g / 14 oz
  • fresh rosemary – 1 sprig
  • salt – to taste
  • black pepper – to taste
  • Parmesan cheese – to serve, grated

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onion and sauté until translucent.
  2. Increase heat to medium-high and add the sausage. Brown the sausage, breaking it up into smaller pieces with a wooden spoon.
  3. Pour in the white wine and let it evaporate for a couple of minutes.
  4. Stir in the tomato sauce and the rosemary sprig. Season with salt and pepper.
  5. Lower the heat and let the sauce simmer for about 20-25 minutes, allowing flavors to meld.
  6. Meanwhile, bring a large pot of salted water to a boil and cook the gramigna until al dente, according to package instructions.
  7. Drain the pasta, reserving some of the pasta water.
  8. Add the drained pasta to the sauce. Mix thoroughly, adding pasta water as needed to achieve a creamy consistency.
  9. Remove the rosemary sprig before serving.
  10. Serve hot, sprinkled generously with grated Parmesan cheese.
