Gobova juha, a traditional Slovenian mushroom soup, is a beloved staple in Slovenian cuisine, renowned for its rich, earthy flavors and creamy texture. Ingredients
- mixed wild mushrooms – 500 g / 1.1 lbs
- butter – 50 g / 3.5 tbsp
- onion, finely chopped – 1 large
- garlic cloves, minced – 2
- flour – 2 tbsp
- vegetable broth – 1.5 liters / 6 cups
- bay leaf – 1
- fresh thyme – 1 tsp
- potato, diced – 1 medium
- heavy cream – 200 ml / 3/4 cup
- salt and pepper – to taste
- parsley, chopped – for garnish
Instructions
- Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and continue to sauté for another minute.
- Stir in the mushrooms and cook until they release their moisture and begin to brown, about 10 minutes.
- Sprinkle the flour over the mushrooms and stir to coat. Cook for another 2 minutes.
- Gradually add the vegetable broth while stirring continuously to avoid lumps.
- Add the bay leaf, thyme, and diced potato. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Stir in the cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove the bay leaf, garnish with chopped parsley, and serve hot.
