Ingredients

  • herring fillets – 1 pound / 450 g
  • water – 2 cups / 480 ml
  • white vinegar – 1 cup / 240 ml
  • sugar – 1/2 cup / 100 g
  • salt – 2 tablespoons / 30 g
  • red onion, thinly sliced – 1 medium / 100 g
  • carrot, thinly sliced – 1 medium / 70 g
  • beet, thinly sliced – 1 small / 50 g
  • allspice berries – 1 tablespoon
  • whole black peppercorns – 1 tablespoon
  • bay leaf – 1 leaf

Instructions

  1. Rinse the herring fillets under cold water and pat them dry.
  2. In a saucepan, combine water, vinegar, sugar, and salt. Heat gently, stirring until sugar and salt dissolve. Remove from heat and let cool.
  3. In a glass jar, layer the herring fillets with slices of onion, carrot, and beet.
  4. Add the allspice, peppercorns, and bay leaf to the jar.
  5. Pour the cooled pickling liquid over the layers until everything is submerged.
  6. Seal the jar and refrigerate for at least 24 hours to allow the flavors to develop.
