  • soy sauce – 2 tablespoons / 30 ml
  • sesame oil – 1 tablespoon / 15 ml
  • green onions – 2, finely chopped
  • garlic – 2 cloves, minced
  • ground black pepper – 1/2 teaspoon
  • vegetable oil – for frying

Instructions

  1. Slice the eggplants into 1/4-inch thick rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  2. Rinse the eggplants and pat dry with paper towels.
  3. In a mixing bowl, combine the flour, cornstarch, cold water, soy sauce, sesame oil, green onions, garlic, and black pepper to create a batter.
  4. Heat vegetable oil in a large pan over medium heat.
  5. Dip each eggplant slice into the batter, ensuring a thorough coating on both sides.
  6. Fry the eggplant slices for 3-4 minutes each side, until golden brown and crispy.
