Ingredients
- Boneless chicken thighs – 500 g / 1.1 lbs
- Pork tenderloin – 500 g / 1.1 lbs
- Red bell pepper – 1 large / 200 g
- Yellow bell pepper – 1 large / 200 g
- Red onion – 1 large / 150 g
- Zucchini – 1 medium / 150 g
- Olive oil – 3 tbsp / 45 ml
- Lemon juice – 2 tbsp / 30 ml
- Garlic cloves – 4 minced / 12 g
- Paprika – 2 tsp / 5 g
- Dried oregano – 1 tsp / 1 g
- Salt – 1 tsp / 5 g
- Black pepper – 1/2 tsp / 1 g
- Wooden skewers – 8
Instructions
- Soak the wooden skewers in water for at least 30 minutes to prevent burning.
- Cut the chicken thighs and pork tenderloin into bite-sized pieces.
- Dice the bell peppers, red onion, and zucchini into chunks similar in size to the meat pieces.
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, paprika, dried oregano, salt, and pepper.
- Add the chicken and pork pieces to the marinade, ensuring each piece is well coated. Let it marinate for at least 1 hour in the refrigerator.
- Preheat your grill to medium-high heat.
- Thread the marinated meats alternately with garden vegetables onto the soaked skewers.
- Grill the skewers for about 12-15 minutes, turning occasionally, until the meat is fully cooked and the vegetables are charred.
- Serve hot with your favorite dips or a side of fresh salad.
