Ingredients
- fish fillets – 500 g / 1.1 lbs
- vermicelli noodles – 400 g / 14 oz
- fish sauce – 2 tbsp / 30 ml
- lime juice – 2 tbsp / 30 ml
- rice vinegar – 1 tbsp / 15 ml
- ginger – 1 tbsp / 10 g, minced
- garlic – 2 cloves, minced
- shallots – 2, thinly sliced
- sugar – 1 tbsp / 12 g
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2.5 g
- oil – for frying
- fresh dill – 1/4 cup / 10 g, chopped
- Thai basil – 1 cup / 30 g
- bean sprouts – 1 cup / 150 g
- water – 1 liter / 4 cups
Instructions
- Cut the fish fillets into small pieces and marinate with fish sauce, lime juice, rice vinegar, ginger, garlic, sugar, salt, and black pepper for 30 minutes.
- While the fish is marinating, cook the vermicelli noodles according to the package instructions and set aside.
- In a large pot, bring water to a gentle simmer. Add shallots and allow to simmer for about 10 minutes.
- Fry the marinated fish pieces in oil until golden and crispy. Remove from oil and drain on paper towels.
- Add fried fish cakes to the broth along with fresh dill and let simmer for another 5 minutes.
- To serve, place a generous portion of noodles into a bowl, pour over the hot broth and fish cakes, and top with Thai basil and bean sprouts.
