  • Dry white wine – 1 cup / 240 ml
  • Fresh thyme – 2 sprigs
  • Bay leaf – 1
  • Salt – to taste
  • Black pepper – to taste
  • Baguette – 1 loaf, sliced
  • Gruyère cheese – 2 cups, grated / 180 g

Instructions

  1. In a large pot, melt the butter with olive oil over medium heat.
  2. Add the sliced onions and cook, stirring often, until they are golden and caramelized, about 45 minutes.
  3. Stir in minced garlic and cook for 1 more minute until fragrant.
  4. Pour in the beef broth and wine, then add thyme and bay leaf.
  5. Season with salt and pepper to taste, and bring to a simmer.
  6. Reduce heat to low, cover, and simmer for another 30 minutes.
  7. Preheat the oven to 350°F (175°C).
  8. Ladle the soup into oven-safe bowls, top each with a slice of baguette, and a generous amount of Gruyère cheese.
  9. Place bowls on a baking sheet and transfer to the oven until the cheese is bubbly and golden, about 10 minutes.
