Ingredients

  • Fregnacce pasta – 400 g / 14 oz

  • Canned whole tomatoes – 800 g / 28 oz
  • Dried chili flakes – 1 tsp
  • Fresh basil leaves – Handful
  • Pecorino Romano cheese, grated – 60 g / 2 oz
  • Salt – To taste
  • Black pepper – To taste

Instructions

  1. Cook the fregnacce pasta in a large pot of boiling salted water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant but not browned.
  3. Add the canned tomatoes, breaking them up with a spoon. Stir in the chili flakes and season with salt and pepper.
  4. Simmer the sauce for 15-20 minutes until it thickens. Adjust the seasoning as necessary.
  5. Toss the cooked pasta with the sauce, adding reserved pasta water as needed to reach the desired consistency.
  6. Tear basil leaves and stir them in just before serving. Top with grated Pecorino Romano cheese.
