Originally a staple for fishermen, this dish is traditionally prepared with fresh fish, often small catches from the day’s haul, simmered with aromatic herbs and spices. The soup is a reflection of Jamaica’s rich coastal bounty, blending the salty breeze of the sea with the fragrant warmth of local produce.

Ingredients

  • whole snapper or sea bass – 2 lbs / 900 g
  • water – 8 cups / 1.9 liters
  • scotch bonnet pepper – 1, whole
  • garlic cloves – 4, minced
  • scallions – 3, chopped
  • thyme – 2 sprigs
  • pimento seeds (allspice) – 1 tsp
  • pumpkin, diced – 1 cup / 150 g
  • yellow yam, diced – 1 cup / 200 g
  • carrot, sliced – 1 large
  • Irish potato, diced – 1 medium
  • salt – to taste
  • freshly ground black pepper – to taste

Instructions

  1. Clean and chop the fish into large chunks, keeping the bones.
  2. In a large pot, bring water to a boil. Add the fish pieces, garlic, thyme, and pimento seeds.
  3. Allow the soup to simmer for 10 minutes.
  4. Remove the fish pieces and set aside. Strain the broth to remove bones and return it to the pot.
  5. Add the pumpkin, yellow yam, carrot, Irish potato, scallions, and scotch bonnet pepper to the broth.
  6. Let the vegetables cook until tender, approximately 20 minutes.
  7. Return the fish to the pot and season with salt and black pepper. Simmer for another 5 minutes.
  8. Adjust seasoning as needed and serve hot.
