Fanzelto – Classic

Fanzelto is a traditional Italian bread, cherished for its simplicity and rustic charm. Typically baked in the rural households of Tuscany, this bread is infused with rich olive oil and sometimes accented with fresh rosemary. Its origins date back to ancient times when bread was a staple in every meal. Fanzelto is often characterized by its golden crust and soft, chewy interior, making it a perfect accompaniment to hearty stews or simply enjoyed with a sprinkle of salt and a drizzle of olive oil.

Ingredients

  • all-purpose flour – 3 1/2 cups / 420 g
  • warm water – 1 1/4 cups / 300 ml
  • olive oil – 1/4 cup / 60 ml
  • active dry yeast – 2 1/4 tsp / 7 g
  • salt – 1 tsp / 6 g
  • fresh rosemary (optional) – 1 tbsp, chopped / 3 g

Instructions

  1. In a large bowl, combine the warm water and yeast. Let it sit for 5 minutes until foamy.
  2. Add the olive oil, salt, and half of the flour. Stir until combined.
  3. Gradually add the remaining flour, kneading by hand or with a dough hook until the dough is smooth and elastic, about 10 minutes.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place until it doubles in size, about 1 hour.
  5. Preheat the oven to 220°C (428°F).
  6. Punch down the dough, shape it into a round or oval loaf, and place it on a baking sheet lined with parchment paper.
  7. Optional: sprinkle the chopped rosemary over the loaf and gently press it in.
  8. Bake in the preheated oven for 25-30 minutes, or until the bread is golden and sounds hollow when tapped.
  9. Let the bread cool on a wire rack before slicing.
