Ingredients

  • lamb ribs – 1.5 lbs / 680 g
  • water – 10 cups / 2.4 liters
  • onion, diced – 1 large / 200 g
  • green bell pepper, chopped – 1 medium / 150 g
  • tomatoes, chopped – 3 medium / 300 g
  • garlic cloves, minced – 4 cloves / 20 g
  • cumin powder – 1 tsp / 2 g
  • ground coriander – 1 tsp / 2 g
  • cayenne pepper – 1/2 tsp / 1 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large pot, add lamb ribs and cover with water. Bring to a boil over medium-high heat.
  2. Skim off any foam that rises to the surface. Add the diced onion, green bell pepper, and chopped tomatoes.
  3. Stir in garlic, cumin, coriander, and cayenne pepper. Season with salt and black pepper.
  4. Reduce heat to low, cover, and let simmer for about 90 minutes, until the meat is tender and flavors meld beautifully.
  5. Adjust seasoning as necessary before serving hot with fresh bread or rice.
