Typically served with somun (a type of Bosnian flatbread) and accompanied by chopped onions, kajmak (a creamy dairy product), and sometimes ajvar (a roasted red pepper condiment), ćevapi embodies a legacy of flavorful tradition and represents the heart and soul of Bosnian cuisine.

Ingredients

  • ground beef – 500 g / 1.1 lbs
  • ground lamb – 250 g / 0.55 lbs
  • garlic, minced – 2 cloves
  • baking soda – 1/2 tsp
  • salt – 1 tsp
  • black pepper – 1 tsp
  • paprika – 1 tsp
  • sparkling water – 2 tbsp
  • somun (or pita bread) for serving – 4 pieces
  • onion, chopped for garnish – 1 medium

Instructions

  1. In a large bowl, combine ground beef, ground lamb, minced garlic, baking soda, salt, black pepper, and paprika.
  2. Add sparkling water to the mixture to enhance tenderness.
  3. Mix the ingredients thoroughly with your hands until well-blended.
  4. Form the meat mixture into small, sausage-shaped ćevapi, about 10 cm long.
  5. Cover and refrigerate for at least 1 hour to let the flavors meld.
  6. Preheat your grill to medium-high heat.
  7. Grill the ćevapi for about 8-10 minutes, turning occasionally, until cooked through and lightly charred.
  8. Serve hot with somun or pita bread and top with chopped onions.
