Ingredients

  • chicken thighs – 1 lb / 450 g
  • olive oil – 3 tablespoons
  • onion – 1 large, chopped
  • garlic – 3 cloves, minced
  • tomatoes – 2 large, chopped
  • bell pepper – 1, chopped
  • paprika – 1 teaspoon
  • cayenne pepper – 1/4 teaspoon
  • chicken broth – 2 cups / 480 ml
  • bay leaves – 2
  • parsley – 1/4 cup / 15 g, chopped
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season the chicken thighs with salt and black pepper.
  3. Add the chicken to the pot and brown on all sides, about 5 minutes per side. Remove from pot and set aside.
  4. In the same pot, add the chopped onion and cook until translucent, about 5 minutes.
  5. Stir in the garlic, tomatoes, and bell pepper. Cook for another 5 minutes until tomatoes break down.
  6. Add paprika and cayenne pepper, stirring to combine.
  7. Return the chicken to the pot. Pour in the chicken broth, and add the bay leaves.
  8. Bring to a simmer, cover, and cook for 25-30 minutes, until chicken is tender and cooked through.
  9. Remove bay leaves. Stir in chopped parsley before serving.
