Ingredients
- chicken thighs – 1 lb / 450 g
- olive oil – 3 tablespoons
- onion – 1 large, chopped
- garlic – 3 cloves, minced
- tomatoes – 2 large, chopped
- bell pepper – 1, chopped
- paprika – 1 teaspoon
- cayenne pepper – 1/4 teaspoon
- chicken broth – 2 cups / 480 ml
- bay leaves – 2
- parsley – 1/4 cup / 15 g, chopped
- salt – to taste
- black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the chicken thighs with salt and black pepper.
- Add the chicken to the pot and brown on all sides, about 5 minutes per side. Remove from pot and set aside.
- In the same pot, add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the garlic, tomatoes, and bell pepper. Cook for another 5 minutes until tomatoes break down.
- Add paprika and cayenne pepper, stirring to combine.
- Return the chicken to the pot. Pour in the chicken broth, and add the bay leaves.
- Bring to a simmer, cover, and cook for 25-30 minutes, until chicken is tender and cooked through.
- Remove bay leaves. Stir in chopped parsley before serving.
