Ekoki is a traditional Cameroonian dish, typically prepared as a hearty vegetarian meal that celebrates the rich and diverse cuisine of Central Africa. Originating from the lush forested regions of Cameroon, Ekoki is a vibrant blend of cornmeal and fragrant spices, combined to form a deeply satisfying dish often cooked in banana leaves, which imparts a unique earthy flavor. Ingredients

  • cornmeal – 2 cups / 240 g
  • fresh spinach – 200 g / 7 oz
  • red palm oil – 1/2 cup / 120 ml
  • onions – 2 large, finely chopped
  • tomatoes – 3 medium, diced
  • red bell pepper – 1, diced
  • scotch bonnet pepper – 1, finely chopped
  • salt – to taste
  • vegetable broth – 2 cups / 480 ml
  • banana leaves – 2 large

Instructions

  1. 1. Heat the red palm oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
  2. 2. Stir in the tomatoes, red bell pepper, and scotch bonnet pepper. Cook for 5-7 minutes until the vegetables are tender.
  3. 3. Add the cornmeal gradually while stirring continuously to avoid lumps.
  4. 4. Pour in the vegetable broth, reduce heat, and allow the mixture to simmer for about 10 minutes.
  5. 5. Fold in the spinach and continue to cook until the spinach wilts and the mixture thickens to your liking.
  6. 6. Season with salt as needed.
  7. 7. Scoop portions into the banana leaves, wrap securely, and place them in a steamer for about 15 minutes.
  8. 8. Serve warm, directly from the banana leaves for an authentic experience.
