Ekoki is a traditional Cameroonian dish, typically prepared as a hearty vegetarian meal that celebrates the rich and diverse cuisine of Central Africa. Originating from the lush forested regions of Cameroon, Ekoki is a vibrant blend of cornmeal and fragrant spices, combined to form a deeply satisfying dish often cooked in banana leaves, which imparts a unique earthy flavor. Ingredients
- cornmeal – 2 cups / 240 g
- fresh spinach – 200 g / 7 oz
- red palm oil – 1/2 cup / 120 ml
- onions – 2 large, finely chopped
- tomatoes – 3 medium, diced
- red bell pepper – 1, diced
- scotch bonnet pepper – 1, finely chopped
- salt – to taste
- vegetable broth – 2 cups / 480 ml
- banana leaves – 2 large
Instructions
- 1. Heat the red palm oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
- 2. Stir in the tomatoes, red bell pepper, and scotch bonnet pepper. Cook for 5-7 minutes until the vegetables are tender.
- 3. Add the cornmeal gradually while stirring continuously to avoid lumps.
- 4. Pour in the vegetable broth, reduce heat, and allow the mixture to simmer for about 10 minutes.
- 5. Fold in the spinach and continue to cook until the spinach wilts and the mixture thickens to your liking.
- 6. Season with salt as needed.
- 7. Scoop portions into the banana leaves, wrap securely, and place them in a steamer for about 15 minutes.
- 8. Serve warm, directly from the banana leaves for an authentic experience.
