Ingredients

  • cassava – 500 g / 1.1 lbs peeled and cubed
  • onion – 1 large, finely chopped
  • garlic – 3 cloves, minced
  • tamarind paste – 2 tablespoons
  • fish stock – 1 liter / 4 cups
  • smoked fish – 200 g / 7 oz, shredded
  • shrimp – 300 g / 10 oz, peeled and deveined
  • scotch bonnet pepper – 1, whole
  • palm oil – 2 tablespoons
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat palm oil in a large pot over medium heat. Sauté onions and garlic until golden brown.
  2. Add the cubed cassava to the pot and stir well to coat with oil.
  3. Pour in the fish stock and bring to a simmer. Cook until the cassava is tender, about 20 minutes.
  4. Add the tamarind paste, smoked fish, shrimp, and scotch bonnet pepper. Season with salt and black pepper.
  5. Simmer gently for an additional 10 minutes, allowing the flavors to meld together.
  6. Remove the scotch bonnet pepper before serving for a milder spice or leave it in for more heat.
  7. Serve hot, garnished with fresh herbs if desired.
