Diri ak Pwa, or rice with beans, is a quintessential Haitian dish. It embodies the essence of Haitian home cooking: hearty, flavorful, and nourishing. This dish combines fluffy white rice with tender, well-seasoned beans, creating a comforting meal enjoyed by families across Haiti. The dish originates from the rich culinary tapestry of the Caribbean island, where local ingredients and spices meld into deeply satisfying flavors. Ingredients
- white rice – 2 cups / 400 g
- red kidney beans – 1 cup / 200 g
- water – 4 cups / 960 ml
- coconut milk – 1 cup / 240 ml
- onion – 1 small, diced
- garlic – 3 cloves, minced
- chicken bouillon cube – 1
- thyme – 2 sprigs
- scotch bonnet pepper – 1, whole
- oil – 2 tablespoons / 30 ml
- salt – to taste
- black pepper – to taste
Instructions
- Rinse and soak the beans overnight in water. Drain and rinse before cooking.
- In a large pot, add the soaked beans and 4 cups of water. Bring to a boil, then reduce heat and simmer until beans are tender, about 1 hour.
- Drain the beans, reserving the cooking liquid.
- In the same pot, heat the oil over medium heat. Add onion and garlic, sautéing until translucent.
- Stir in the rice, cooking for 2-3 minutes until slightly toasted.
- Add the beans, coconut milk, bouillon cube, thyme, and reserved cooking liquid (enough to make 4 cups with the coconut milk included). Stir well.
- Place the scotch bonnet pepper on top, cover the pot with a lid, and simmer on low heat for 20-25 minutes, or until the rice is cooked and liquid absorbed.
- Remove pepper before serving. Season with salt and black pepper to taste.
