Ingredients

  • all-purpose flour – 3 cups / 360 g
  • milk – 1 cup / 240 ml
  • unsalted butter – 1/4 cup / 55 g
  • sugar – 2 tbsp / 25 g
  • active dry yeast – 2 tsp / 7 g
  • salt – 1/2 tsp / 3 g

Instructions

  1. Warm the milk until it’s lukewarm. Add the sugar and yeast, stir slightly, and let it sit for 5-10 minutes until frothy.
  2. In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles breadcrumbs.
  3. Make a well in the center of the flour mixture and pour in the yeast and milk mixture. Stir until a dough begins to form.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Punch down the dough, divide into 8 equal portions, and shape into rolls.
  7. Place rolls on a baking sheet, cover, and let rise again for 30 minutes.
  8. Preheat oven to 375°F (190°C) and bake the rolls for 15-18 minutes until lightly golden.
  9. Cool on a wire rack. Serve the splits halved with clotted cream and jam.
