Instructions
- Melt butter with olive oil in a large pot over medium heat.
- Add onions and sauté until they are deeply caramelized, about 25-30 minutes, stirring occasionally.
- Stir in garlic and cook for an additional 2 minutes.
- Pour in the beef broth, add caraway seeds, bay leaf, and thyme. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Season with salt and black pepper to taste. Remove and discard the bay leaf.
- Preheat the oven to broil.
- Ladle the soup into oven-safe bowls, top each with a slice of crusty bread and a generous amount of grated Gruyère.
