Ingredients
- Green lentils – 1 cup / 200 g
- Water – 6 cups / 1.4 liters
- Carrots, diced – 2 medium / 150 g

- Celery stalks, chopped – 2 / 100 g
- Onion, chopped – 1 large / 150 g
- Garlic cloves, minced – 3 / 15 g
- Bay leaves – 2
- Salt – 1 tsp / 6 g
- Black pepper – 1/2 tsp / 2 g
- Vegetable oil – 2 tbsp / 30 ml
- Vinegar – 2 tbsp / 30 ml
- Fresh parsley, chopped – 2 tbsp / 8 g
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the vegetable oil over medium heat. Sauté the onion until translucent.
- Add the garlic, carrots, and celery, cooking for about 5 minutes until the vegetables begin to soften.
- Add the diced potatoes, lentils, water, bay leaves, salt, and pepper to the pot. Bring to a boil.
- Reduce heat to a simmer, cover, and cook for about 30-40 minutes, or until the lentils are tender.
- Stir in the vinegar, adjust seasoning as preferred, and remove the bay leaves.
- Serve hot, garnished with fresh parsley.
