Ingredients

  • goat meat – 3 lbs / 1.36 kg, cut into cubes
  • pigeon peas – 2 cups / 360 g, cooked
  • curry powder – 3 tbsp / 24 g
  • cumin – 1 tsp / 2 g
  • garlic – 4 cloves, minced
  • ginger – 1 inch piece, grated
  • onion – 1 large, chopped
  • scotch bonnet pepper – 1, seeded and chopped
  • coconut milk – 1 can / 400 ml
  • vegetable oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste
  • fresh cilantro – 1/4 cup / 15 g, chopped
  • lime – 1, juiced

Instructions

  1. In a large bowl, combine goat meat with lime juice, salt, and black pepper. Let it marinate for at least 30 minutes.
  2. Heat oil in a large pot over medium heat. Add onions, garlic, ginger, and scotch bonnet pepper. Sauté until fragrant.
  3. Stir in curry powder and cumin, cooking for another 2 minutes to toast the spices.
  4. Add the marinated goat meat to the pot, browning all sides.
  5. Pour in coconut milk and bring to a simmer. Cover and cook on low heat for about 1.5 to 2 hours, or until the meat is tender.
  6. Add pigeon peas and cook for an additional 15 minutes to allow flavors to combine.
  7. Garnish with chopped cilantro before serving.
