Ingredients
- Beef brisket – 1 lb / 450 g
- Pork belly – 1 lb / 450 g
- Chorizo sausage – 3 links / 300 g
- Blood sausage – 2 links / 200 g
- Chicken thighs – 4 pieces / 400 g
- Cabbage – 1 head / 500 g
- Carrots – 4 large / 200 g
- Potatoes – 4 large / 800 g
- Turnips – 2 large / 200 g
- Garlic cloves – 4 cloves
- Bay leaves – 2 leaves
- Olive oil – 3 tbsp / 45 ml
- Salt – to taste
- Black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add garlic and bay leaves, sautéing until fragrant.
- Add beef brisket and pork belly, browning each side for about 5 minutes.
- Pour in enough water to cover the meats. Bring to a boil, then reduce to a simmer for 1 hour.
- Add chicken thighs, chorizo, and blood sausage. Cook for an additional 30 minutes.
- Prepare the vegetables by peeling and cutting them into large chunks.
- Add the cabbage, carrots, potatoes, and turnips to the pot. Season with salt and pepper.
- Cook until all vegetables and meats are tender, about 30-40 minutes more.
- Remove meats and vegetables; slice meats if necessary. Serve broth alongside the solid ingredients.
