Ingredients

  • chicken thighs – 8 pieces / approx. 1.5 kg
  • butter – 2 tablespoons / 28 g
  • olive oil – 2 tablespoons
  • onion – 1 large, chopped
  • garlic cloves – 3, minced
  • button mushrooms – 250 g / 8 oz, sliced
  • Riesling wine – 500 ml / 2 cups
  • chicken stock – 500 ml / 2 cups
  • heavy cream – 100 ml / 0.5 cup
  • thyme sprigs – 4
  • bay leaf – 1
  • salt and pepper – to taste
  • fresh parsley – for garnish

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat butter and olive oil in a large skillet over medium-high heat.
  3. Brown the chicken thighs on all sides, then remove and set aside.
  4. In the same skillet, add chopped onion and sauté until translucent.
  5. Add garlic and mushrooms, cooking until mushrooms are soft.
  6. Return chicken to skillet. Pour in Riesling wine and chicken stock, and add thyme and bay leaf.
  7. Bring to a simmer. Cover and cook on low heat for 30-40 minutes or until chicken is cooked through.
  8. Stir in heavy cream and adjust seasoning with salt and pepper.
  9. Serve hot, garnished with fresh parsley.
