Ingredients
- conch meat – 1 lb / 450 g
- rice – 2 cups / 400 g
- coconut milk – 1 cup / 240 ml
- chicken broth – 2 cups / 480 ml
- green bell pepper – 1, diced
- onion – 1, diced
- celery – 2 stalks, diced
- garlic – 2 cloves, minced
- tomato paste – 2 tbsp / 30 g
- thyme – 1 tsp / 1 g
- allspice – 1/2 tsp / 1 g
- bay leaf – 1
- salt – to taste
- pepper – to taste
- vegetable oil – 2 tbsp / 30 ml
- lime – 1, juiced
- scallions – 2, sliced
Instructions
- Clean the conch meat thoroughly, then tenderize it by soaking it in lime juice for about 10 minutes.
- Heat the vegetable oil in a large pot over medium heat. Add the onion, bell pepper, celery, and garlic, sautéing until the onions are translucent.
- Stir in the tomato paste, thyme, and allspice, cooking for another minute.
- Add the conch meat to the pot, stirring occasionally until it is lightly browned.
- Pour in the rice and stir to coat the grains with the spices and vegetables.
- Add the coconut milk, chicken broth, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is fully cooked and has absorbed the liquid.
- Remove the bay leaf, then fluff the rice with a fork. Top with scallions before serving.
