Ingredients
- fresh conch – 1 pound / 450 g
- lime juice – 1 cup / 240 ml
- orange juice – 1/4 cup / 60 ml

- Scotch bonnet pepper – 1 small, finely minced
- fresh cilantro – 1/4 cup / 10 g, chopped
- salt – 1 tsp
- black pepper – 1/2 tsp
Instructions
- Thoroughly clean the fresh conch by rinsing it under cold water, then tenderize it by pounding gently with a meat mallet.
- Cut the conch into small dice or thin slices, according to your preference.
- In a non-reactive bowl, combine the conch with lime juice and orange juice. Ensure the conch is completely submerged.
- Cover and refrigerate for at least 1 hour, or until the conch becomes opaque and ‘cooked’ by the citrus juice.
- Stir in the red onion, tomato, Scotch bonnet, cilantro, salt, and black pepper.
- Toss thoroughly to combine, adjust seasoning if necessary, then let sit for additional 15 minutes to meld flavors.
