Coddle is a traditional Irish dish hailing from Dublin, blending hearty ingredients in a comforting stew that embodies the essence of Irish home cooking. Typically made with sausages and bacon, slow-cooked with potatoes and onions, this dish has been a staple of Irish households for generations. Ingredients

  • pork sausages – 8 pieces / 480 g
  • bacon rashers – 200 g
  • potatoes – 4 large / 800 g
  • onions – 2 large / 300 g
  • carrots – 2 medium / 150 g
  • chicken stock – 3 cups / 720 ml
  • fresh parsley – a handful / 15 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Preheat the oven to 150°C (300°F).
  2. Brown the sausages in a skillet over medium heat until evenly colored but not fully cooked. Remove and set aside.
  3. In the same skillet, lightly brown the bacon rashers. Set aside with the sausages.
  4. Peel and slice the potatoes and onions. Peel and thickly slice the carrots.
  5. In an ovenproof dish, layer potatoes, onions, carrots, sausages, and bacon.
  6. Pour the chicken stock over the layered ingredients, ensuring the liquid covers them.
  7. Season with salt and pepper. Cover the dish and place in the oven.
  8. Cook for about 2 hours, or until the potatoes are tender and the flavors have melded together.
  9. Garnish with freshly chopped parsley before serving.
