Coddle is a traditional Irish dish hailing from Dublin, blending hearty ingredients in a comforting stew that embodies the essence of Irish home cooking. Typically made with sausages and bacon, slow-cooked with potatoes and onions, this dish has been a staple of Irish households for generations. Ingredients
- pork sausages – 8 pieces / 480 g
- bacon rashers – 200 g
- potatoes – 4 large / 800 g
- onions – 2 large / 300 g
- carrots – 2 medium / 150 g
- chicken stock – 3 cups / 720 ml
- fresh parsley – a handful / 15 g
- salt – to taste
- black pepper – to taste
Instructions
- Preheat the oven to 150°C (300°F).
- Brown the sausages in a skillet over medium heat until evenly colored but not fully cooked. Remove and set aside.
- In the same skillet, lightly brown the bacon rashers. Set aside with the sausages.
- Peel and slice the potatoes and onions. Peel and thickly slice the carrots.
- In an ovenproof dish, layer potatoes, onions, carrots, sausages, and bacon.
- Pour the chicken stock over the layered ingredients, ensuring the liquid covers them.
- Season with salt and pepper. Cover the dish and place in the oven.
- Cook for about 2 hours, or until the potatoes are tender and the flavors have melded together.
- Garnish with freshly chopped parsley before serving.
