- red bell pepper, diced – 1 large
- tomato paste – 2 tbsp / 30 g
- white wine – 1/2 cup / 120 ml
- bay leaf – 1 leaf
- paprika – 1 tsp / 2 g
- salt – to taste
- black pepper – to taste
Instructions
- Season the pork shoulder with salt, pepper, and paprika.
- Heat olive oil in a large pan over medium heat and brown the pork on all sides. Remove the pork and set aside.
- In the same pan, add minced garlic, onion, and red bell pepper. Sauté until the onion is translucent.
- Stir in tomato paste and cook for another 2 minutes.
- Deglaze the pan with white wine, scraping up any browned bits from the bottom.
- Return the pork to the pan, add corn kernels, and the bay leaf. Cover with water if necessary.
- Simmer over low heat for about 1.5 hours until the pork is tender and the sauce has thickened.
- Adjust seasoning with salt and pepper to taste before serving.
