Ingredients

  • water – 1 cup / 240 ml
  • unsalted butter – 1/2 cup / 115 g
  • all-purpose flour – 1 cup / 120 g
  • large eggs – 4
  • whole milk – 2 cups / 480 ml
  • granulated sugar – 1/2 cup / 100 g
  • vanilla extract – 1 tsp
  • cornstarch – 1/4 cup / 30 g
  • dark chocolate – 120 g / 4.2 oz
  • heavy cream – 1/2 cup / 120 ml

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, bring water and butter to a boil over medium heat. Add flour and stir vigorously until the mixture forms a ball.
  3. Remove from heat. Beat in eggs one at a time, mixing well after each addition until smooth.
  4. Pipe the dough onto a baking sheet lined with parchment paper, forming 4-inch logs.
  5. Bake for 20-25 minutes until golden brown and puffed. Cool on a wire rack.
  6. For the filling, heat milk in a saucepan until simmering. Whisk sugar, vanilla, and cornstarch in a bowl. Slowly whisk in hot milk, return to saucepan, and cook until thickened.
  7. Cool pastry cream completely before filling éclairs.
  8. Melt chocolate with cream in a double boiler for glaze. Stir until smooth.
  9. Pipe the filling into éclairs through a small hole, then dip tops into chocolate glaze. Allow glaze to set before serving.
