Ingredients

- large eggs – 4

- granulated sugar – 1/2 cup / 100 g
- vanilla extract – 1 tsp
- cornstarch – 1/4 cup / 30 g
- dark chocolate – 120 g / 4.2 oz
- heavy cream – 1/2 cup / 120 ml
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, bring water and butter to a boil over medium heat. Add flour and stir vigorously until the mixture forms a ball.
- Remove from heat. Beat in eggs one at a time, mixing well after each addition until smooth.
- Pipe the dough onto a baking sheet lined with parchment paper, forming 4-inch logs.
- Bake for 20-25 minutes until golden brown and puffed. Cool on a wire rack.
- For the filling, heat milk in a saucepan until simmering. Whisk sugar, vanilla, and cornstarch in a bowl. Slowly whisk in hot milk, return to saucepan, and cook until thickened.
- Cool pastry cream completely before filling éclairs.
- Melt chocolate with cream in a double boiler for glaze. Stir until smooth.
- Pipe the filling into éclairs through a small hole, then dip tops into chocolate glaze. Allow glaze to set before serving.
