Chungmu Gimbap, a delightful Korean dish, originates from the coastal city of Chungmu, now known as Tongyeong, in South Korea. This delightful twist on traditional gimbap, a Korean rice roll, features small, hand-rolled rice and seaweed packets accompanied by a spicy and tangy radish and squid side. It’s a delightful play of textures and flavors, showcasing both the simplicity and profound richness of Korean coastal cuisine.

Ingredients

  • Short-grain white rice – 3 cups / 600 g
  • Water – 3.5 cups / 840 ml
  • Sesame oil – 2 tablespoons / 30 ml
  • Salt – 1 teaspoon / 6 g
  • Seaweed sheets (nori) – 10 sheets
  • Dried squid – 200 g
  • Daikon radish – 200 g
  • Gochugaru (Korean chili flakes) – 2 tablespoons / 16 g
  • Soy sauce – 2 tablespoons / 30 ml
  • Rice vinegar – 1 tablespoon / 15 ml
  • Sugar – 1 tablespoon / 12 g
  • Garlic, minced – 2 cloves / 6 g

Instructions

  1. Rinse the rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  2. Once cooked, let the rice cool slightly before mixing in sesame oil and salt. Stir gently to combine.
  3. Slice seaweed sheets into quarters. Place a small amount of rice on each quarter and roll tightly without any fillings.
  4. Prepare the squid by soaking it in warm water for 20 minutes, then slicing into thin strips.
  5. Peel and julienne the daikon radish.
  6. In a bowl, combine gochugaru, soy sauce, rice vinegar, sugar, and minced garlic. Toss mixture with squid and radish until evenly coated. Let it marinate for at least 10 minutes.
  7. Serve the rice rolls alongside the spicy squid and radish mixture.

  • Daikon radish -> Regular radish
