Ingredients
- cooked white rice – 2 cups / 400 g
- cooked black beans – 1 cup / 240 g
- olive oil – 2 tbsp / 30 ml
- yellow onion, finely chopped – 1 medium / 150 g
- garlic cloves, minced – 2 cloves
- ground cumin – 1 tsp / 2 g
- salt – to taste
- black pepper – to taste
- fresh cilantro, chopped – 1/4 cup / 15 g
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 5-7 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the cooked rice and beans to the skillet and mix well to combine.
- Sprinkle the ground cumin over the mixture and season with salt and pepper to taste.
- Cook, stirring occasionally, until the rice and beans are heated through, about 5-10 minutes.
- Remove from heat and stir in chopped cilantro before serving.
