Ingredients
- beef chuck roast – 2 lbs / 900 g
- onion, sliced – 1 large
- red bell pepper, sliced – 1 medium
- tomatoes, diced – 2 medium
- garlic cloves, minced – 3 cloves
- ground cumin – 1 tsp
- oregano – 1 tsp
- salt – 2 tsp
- black pepper – 1 tsp
- vegetable oil – 2 tbsp
- beef stock – 2 cups / 480 ml
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Season the beef with salt and black pepper and brown on all sides in the pot. Remove and set aside.
- In the same pot, add sliced onions and sauté until translucent.
- Add the garlic, bell pepper, and tomatoes, cooking for another 5 minutes.
- Stir in the cumin and oregano, incorporating the spices.
- Return the beef to the pot and pour in the beef stock.
- Bring to a boil, then lower the heat to simmer, covering the pot. Cook for about 2 hours, until the beef is tender.
- Remove the beef, let it cool slightly, then shred using two forks.
- Return shredded beef to the pot, mixing well with the vegetables. Simmer for an additional 10 minutes.
- Serve hot alongside rice or tortillas.
