Ingredients
- Dried red kidney beans – 2 cups / 400 g
- Chorizo sausage – 200 g / 7 oz, sliced
- Pancetta – 150 g / 5 oz, diced
- Onion – 1 large / 150 g, finely chopped
- Garlic – 4 cloves, minced
- Sweet paprika – 1 tablespoon / 8 g
- Smoked paprika – 1 teaspoon / 2 g
- Bay leaves – 2 leaves
- Olive oil – 2 tablespoons / 30 ml
- Chicken stock – 1 liter / 4 cups
- Salt – To taste
- Black pepper – To taste
- Water – 500 ml / 2 cups
Instructions
- Rinse the kidney beans and soak them in water overnight.
- Drain the beans and set aside.
- In a large pot, heat olive oil over medium heat. Add chorizo and pancetta, and cook until lightly browned.
- Add the chopped onion and garlic to the pot, sauté until the onion is translucent.
- Stir in the sweet paprika, smoked paprika, and bay leaves, letting them cook for about 1 minute to release their aroma.
- Add the soaked beans to the pot, then pour in the chicken stock and water.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender.
- Season with salt and black pepper to taste. Adjust the seasoning as needed before serving.
