Ingredients

  • chorizo sausage – 200 g / 7 oz, sliced
  • cured ham – 150 g / 5 oz, diced
  • turnip greens – 300 g / 10.5 oz, chopped
  • russet potatoes – 500 g / 1 lb, peeled and cubed
  • cannellini beans – 400 g / 14 oz can, drained and rinsed
  • garlic – 3 cloves, minced
  • bay leaves – 2 leaves
  • olive oil – 2 tbsp
  • salt – to taste
  • black pepper – to taste
  • water – 2 liters / 8.5 cups

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté until golden and fragrant.
  2. Add the chorizo and diced cured ham to the pot, cooking until they release their oils and become slightly crispy.
  3. Pour in the water and bring it to a boil. Add the bay leaves.
  4. Add the potatoes to the pot and simmer for about 15 minutes or until they start becoming tender.
  5. Incorporate the turnip greens and cannellini beans, stirring well to combine. Season with salt and black pepper.
  6. Continue to simmer for another 15 minutes until the greens are tender and the flavors are well combined.
  7. Remove from heat and let the soup sit for a few minutes before serving.
