- olive oil – 3 tbsp / 45 ml
- cayenne pepper – 1 tsp
- ground almonds – 1/4 cup / 30 g
- bread – 2 slices, toasted and chopped
- vinegar – 2 tbsp / 30 ml
- salt – to taste
- parsley – handful, chopped
- bay leaf – 1
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft and translucent.
- Add diced tomatoes and bell pepper, cook until softened.
- Incorporate the saffron, cayenne pepper, and bay leaf. Stir for about 1 minute to release aromas.
- Pour in the fish stock and bring to a gentle simmer. Add ground almonds and bread pieces for thickness.
- Introduce the pintarroja chunks and vinegar. Simmer gently for 20-25 minutes, ensuring the fish is cooked through.
- Season the soup with salt to taste and garnish with fresh parsley before serving hot.
