Ingredients

  • pintarroja (dogfish) – 1 lb / 450 g
  • fish stock – 5 cups / 1.2 liters

  • green bell pepper – 1, diced
  • saffron strands – a pinch
  • olive oil – 3 tbsp / 45 ml
  • cayenne pepper – 1 tsp
  • ground almonds – 1/4 cup / 30 g
  • bread – 2 slices, toasted and chopped
  • vinegar – 2 tbsp / 30 ml
  • salt – to taste
  • parsley – handful, chopped
  • bay leaf – 1

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft and translucent.
  2. Add diced tomatoes and bell pepper, cook until softened.
  3. Incorporate the saffron, cayenne pepper, and bay leaf. Stir for about 1 minute to release aromas.
  4. Pour in the fish stock and bring to a gentle simmer. Add ground almonds and bread pieces for thickness.
  5. Introduce the pintarroja chunks and vinegar. Simmer gently for 20-25 minutes, ensuring the fish is cooked through.
  6. Season the soup with salt to taste and garnish with fresh parsley before serving hot.
