Ingredients
- filo pastry sheets – 500 g / 1 lb
- whole milk – 1 liter / 4 cups
- sugar – 200 g / 1 cup
- corn starch – 50 g / 1/4 cup
- eggs – 4 large
- butter, melted – 100 g / 1/2 cup
- vanilla extract – 1 tsp
- lemon zest – 1 tsp
Instructions
- Preheat your oven to 180°C (350°F).
- In a saucepan, combine milk and sugar, and heat on medium, stirring occasionally, until sugar is dissolved.
- In a separate bowl, whisk together eggs, corn starch, vanilla extract, and lemon zest until smooth.
- Pour a small amount of the hot milk into the egg mixture, whisking constantly to temper the eggs. Gradually add the rest of the milk to the egg mixture.
- Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens into a custard-like consistency.
- Layer half of the filo sheets in a buttered baking dish, brushing each sheet with melted butter.
- Pour the custard evenly over the filo sheets.
- Cover with the remaining filo sheets, continuing to brush each with melted butter.
- Bake for 45-50 minutes or until the top is golden brown and crispy.
- Allow to cool slightly before serving.
