Ingredients

  • filo pastry sheets – 500 g / 1 lb
  • whole milk – 1 liter / 4 cups
  • sugar – 200 g / 1 cup
  • corn starch – 50 g / 1/4 cup
  • eggs – 4 large
  • butter, melted – 100 g / 1/2 cup
  • vanilla extract – 1 tsp
  • lemon zest – 1 tsp

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, combine milk and sugar, and heat on medium, stirring occasionally, until sugar is dissolved.
  3. In a separate bowl, whisk together eggs, corn starch, vanilla extract, and lemon zest until smooth.
  4. Pour a small amount of the hot milk into the egg mixture, whisking constantly to temper the eggs. Gradually add the rest of the milk to the egg mixture.
  5. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens into a custard-like consistency.
  6. Layer half of the filo sheets in a buttered baking dish, brushing each sheet with melted butter.
  7. Pour the custard evenly over the filo sheets.
  8. Cover with the remaining filo sheets, continuing to brush each with melted butter.
  9. Bake for 45-50 minutes or until the top is golden brown and crispy.
  10. Allow to cool slightly before serving.
