Ingredients

  • vegetable oil – 3 tbsp / 45 ml
  • brown sugar – 2 tbsp / 28 g
  • onion, chopped – 1 medium / 150 g
  • scotch bonnet pepper, sliced – 1 piece
  • garlic cloves, minced – 3 cloves / 12 g
  • bell pepper, chopped – 1 large / 150 g
  • thyme, fresh – 1 tsp / 1 g
  • tomatoes, chopped – 2 medium / 240 g
  • allspice – 1 tsp / 2 g
  • black pepper – 1 tsp / 2 g
  • chicken stock – 2 cups / 480 ml
  • soy sauce – 2 tbsp / 30 ml
  • cornstarch – 1 tbsp / 8 g
  • water – 2 tbsp / 30 ml

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add brown sugar, stirring until it caramelizes to a deep brown color.
  3. Add the chopped onion, scotch bonnet pepper, and minced garlic to the skillet. Sauté until the onion is translucent.
  4. Stir in the bell pepper, thyme, and tomatoes. Cook until the vegetables are softened.
  5. Season with allspice and black pepper, stirring to combine.
  6. Pour in chicken stock and soy sauce. Bring the mixture to a simmer and cook for 20 minutes to thicken.
  7. Mix cornstarch with water to create a slurry. Stir into the sauce to thicken further, cooking for 2 additional minutes.
  8. Adjust seasoning to taste and serve over your choice of protein, like chicken or fish.
