- Red wine – 125 ml / 1/2 cup
Instructions
- Preheat your oven to 200°C (400°F).
- Season the sirloin on all sides with salt and black pepper.
- In a heavy skillet, heat olive oil over medium-high heat. Add the beef and sear until browned all over, about 3-4 minutes per side.
- Add minced garlic and rosemary to the skillet, followed by butter. Baste the beef with the melted butter for 2 minutes.
- Transfer the skillet with the beef to the preheated oven and roast for 10-15 minutes for medium-rare, or until desired doneness.
- Meanwhile, in another pan, place mixed vegetables and simmer in beef stock until tender.
- Remove the cooked beef from the oven, wrap it loosely in foil, and let it rest for 10 minutes.
- Use the same skillet to make the gravy: add red wine to the pan juices, scrub up the fond with a wooden spoon, and simmer the mixture until reduced by half.
