Brathering is a traditional German seafood dish that skillfully combines fried herring with a sharp, tangy marinade. Ingredients

  • fresh herring fillets – 8 pieces
  • all-purpose flour – 1 cup / 125 g
  • salt – 1 teaspoon
  • black pepper – 1 teaspoon
  • vegetable oil – 1/2 cup / 120 ml
  • onions, thinly sliced – 2 large
  • white vinegar – 1 cup / 240 ml
  • water – 1/2 cup / 120 ml
  • sugar – 2 tablespoons
  • bay leaves – 2
  • whole black peppercorns – 1 teaspoon
  • mustard seeds – 1 teaspoon

Instructions

  1. Clean and pat the herring fillets dry with paper towels.
  2. Mix flour with salt and pepper. Dredge each fillet in the seasoned flour until well coated.
  3. Heat the vegetable oil in a large skillet over medium heat. Fry the herring fillets until golden and cooked through, about 3-4 minutes per side. Remove and set aside.
  4. In a saucepan, combine onions, vinegar, water, sugar, bay leaves, peppercorns, and mustard seeds. Bring to a boil and simmer for 5 minutes.
  5. Layer the fried herring fillets and onion mixture in a deep dish, ensuring the fish is completely covered by the liquid.
  6. Allow to marinate in the refrigerator for at least 24 hours before serving to develop full flavor.
